Celebration Chocolate Cheesecake

Yummeee! Celebration Chocolate Cheesecake is like fireworks exploding in your mouth! There is nothing better than having a late night Chocolate Creamy dessert the night before the 4th of July! I find it the best way to start the celebration!!


Celebration Chocolate Cheesecake:

18 Oreo Cookies,finely crushed
2 Tbsp. butter or margarine, melted
1 pkg. Cream Cheese, softened
2 pkg. Fat Free Cream Cheese, softened
3/4 C. Sugar
1 tsp. Vanilla
1 pkg.(8 squares) Semi-Sweet Chocolate, melted but slightly cooled
3 Egg Whites

1. Pre-heat oven 325 degrees Farhenheit

2. Combine Butter and Crushed Crumbs pressing onto bottom of 9-inch springform can to form an Oreo Crust.

3. Beat Cream cheese, sugar and vanilla with a mixer until well blended. Add egg whites, one at a time mixing on low speed. Add melted Chocolate (see below); mix until just combined.

4. Bake 50 minutes to one hour until center is almost set.

5. Refrigerate 2 hours.

To Melt Chocolate:

In a small sauce pan simmer water and place double boiler on top with chocolate. Do not let water boil or touch the bottom of the double boiler because you can scorch the chocolate(yuck). Stir chocolate constantly until melted and smoothe. Let chocolate cool to body temperature.
